Apricot and coconut choc cookies

Fun baking project: Choc chip apricot cookies for the whole family!
Ingredients:
  • 150g (1 cup) plain flour
  • 200g (1 cup, firmly packed) brown sugar
  • 90g (1 cup) rolled oats
  • 85g (1 cup) desiccated coconut
  • 80g (1/2 cup) diced dried apricots
  • 70g (1/2 cup) pecans, coarsely chopped
  • 125g butter, melted, cooled
  • 2 eggs
  • 4.40 gm vanilla essence
  • 50g (1/4 cup) dark choc bits
Instructions:
  • Preheat your oven to 180°C while you line 2 large baking trays with non-stick baking paper. In a large bowl, sift the flour and sugar, then add oats, coconut, apricot, and pecans. Stir until thoroughly mixed and make a well in the center.
  • Combine the melted butter, eggs, and vanilla in a small bowl, then mix them into the flour mixture until well combined.
  • Shape heaped tablespoonfuls of the mixture into balls using your hands. Arrange the balls on prepared trays, leaving 5cm of space between each. Press 3 choc bits into each ball and gently flatten until about 6cm round.
  • Place in the oven and bake for 15 minutes or until beautifully golden. Then, transfer to a wire rack to cool completely.
