Apricot and coconut slice

Delicious member recipe, not taste-tested.
Ingredients:
  • 250g plain sweet biscuits
  • 100g butter, chopped
  • 161.25 gm sweetened condensed milk
  • 32.50 gm toasted shredded coconut
  • 125.00 ml finely chopped dried apricots
  • 200g white chocolate, coarsely chopped
  • 9.20 gm vegetable oil
Instructions:
  • Prepare a 19 x 29cm slice pan by greasing it and lining it with baking paper.
  • Pulse 200g of biscuits until finely ground in a food processor. Then chop the rest coarsely.
  • In a small saucepan over low heat, melt the butter with condensed milk until smooth. In a small bowl, mix together processed and chopped biscuits, coconut, and dried apricots. Stir in the melted butter mixture. Press the mixture into a pan and refrigerate for 20 minutes until set.
  • Melt white chocolate and oil until smooth and glossy using a microwave or double boiler. Pour the mixture over the slice, then chill until solid before slicing into 24 pieces.
