Healthy homemade fruit and rice bubble bars for lunch boxes.
Ingredients:
  • Melted butter, to grease
  • 90g (2 1/2 cups) rice bubbles
  • 95g (1/2 cup) finely chopped pitted dried dates
  • 80g (1/2 cup) diced dried apricots
  • 13.60 gm desiccated coconut
  • 220g (1 cup) caster sugar
  • 60ml (1/4 cup) water
  • 60ml (1/4 cup) liquid glucose
  • 60g (3 tbsp) butter, at room temperature, chopped
  • 6.00 gm sesame seeds
Instructions:
  • Prepare a 23cm square slab pan by coating it lightly with melted butter. Line the base and two opposite sides with non-stick baking paper, ensuring that it hangs over the edges.
  • In a large heatproof bowl, mix together rice bubbles, dates, apricots, and coconut until well combined. Place the bowl over a saucepan of simmering water on low heat.
  • In a small saucepan, blend sugar, water, and glucose. Stir over low heat until sugar dissolves. Use a wet pastry brush to wipe down the sides of the pan. Increase heat to medium-high and boil uncovered for 5 minutes.
  • Add the butter and mix swiftly until it melts and blends in. Promptly pour it into the rice bubble mixture and stir rapidly to coat the dry ingredients.
  • Transfer the mixture into the pan and swiftly press it evenly using a metal spoon to create a smooth surface. Sprinkle sesame seeds on top and let it sit uncovered for 6 minutes to set.
  • Gently transfer the slice onto a board using a piece of paper. Cut it into 8 even strips, then cut each strip into 3 smaller pieces. Allow them to cool completely on the board.
