Indulge guilt-free with flavorful, diet-friendly macaroons.
Ingredients:
  • 150g blanched almonds
  • 175g (3/4 cup) caster sugar
  • 50g (2/3 cup) breadcrumbs made from day-old bread
  • 2 egg whites
  • 1 orange, rind finely grated
  • 35g pine nuts
Instructions:
  • Prepare 2 large baking trays with non-stick baking paper. Pulse the almonds in a food processor until finely ground, then transfer to a medium bowl.
  • Combine sugar, breadcrumbs, egg whites, and orange rind in a bowl. Mash and mix with a fork until thoroughly combined.
  • Scoop rounded teaspoons of the mixture onto lined trays, spacing them 3cm apart. Gently press 5-6 pine nuts onto each mound and shape them into ovals with your fingers.
  • Allow to sit at room temperature, uncovered, for 3 hours to gently dry.
  • Preheat the oven to 150°C. Bake the macaroons for 22 minutes, rotating the trays halfway through, until they turn a light golden color. Allow them to cool on the trays.
