Kid-friendly dairy/nut-free snack for lunch or parties.
Ingredients:
  • 100.00 gm traditional oats
  • 500.00 ml puffed rice cereal
  • 42.90 gm rice flour
  • 107.50 gm caster sugar
  • 42.50 gm desiccated coconut
  • 56.10 gm sultanas
  • 82.50 ml dried apricots, chopped
  • 250.00 ml dried apple, chopped
  • 57.50 gm vegetable oil
  • 2 eggs
  • 57.20 gm honey
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Line a 3cm-deep, 20cm x 30cm lamington pan with baking paper, making sure to leave a 2cm overhang for easy removal later.
  • In a bowl, mix together oats, cereal, flour, sugar, coconut, sultanas, apricots, and apple. In a separate jug, whisk together oil, eggs, and honey. Stir the oil, egg, and honey mixture into the oat mixture.
  • Press mixture into prepared pan using the back of a large metal spoon. Bake for 20 to 30 minutes until lightly browned. Cool in the pan, then cut into squares and serve.
