Dairy and gluten-free keto nut bars, perfect for a convenient and delicious sweet snack on-the-go.
Ingredients:
  • 85g (1/2 cup) almonds
  • 55g (1/2 cup) walnut halves
  • 80g (1/2 cup) macadamia nuts
  • 80g (1/2 cup) pepitas
  • 85g (1 cup) desiccated coconut
  • 130g (1/2 cup) peanut coconut spread
  • 60g (1/4 cup) solidified coconut oil
  • 2 tsp vanilla bean paste
Instructions:
  • Prepare a 16 x 26cm lamington pan by lightly greasing it and lining it with baking paper.
  • Pulse almonds, walnuts, macadamia nuts, and pepitas in a food processor until coarsely chopped. Transfer to a large bowl and mix in the coconut and cinnamon.
  • In a small saucepan, melt the peanut spread, coconut oil, and vanilla over low heat for 3-5 minutes, stirring constantly until smooth and well mixed.
  • Combine the peanut mixture with the dry ingredients until fully mixed. Press the mixture firmly into the pan, smoothing it out with a spoon. Chill in the fridge for 2-3 hours or until set. Cut into 16 bars.
