Delicious keto crackers crafted with mozzarella, almond flour, and egg yolk. Yields around 40 savory bites.
Ingredients:
  • 0.5 cup shredded mozzarella cheese
  • 0.33333334326744 cup finely ground almond flour
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon salt
  • 1 large egg yolk
Instructions:
  • Preheat the oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
  • In a microwave-safe bowl, mix together mozzarella cheese, almond flour, garlic powder, and salt. Microwave for 30 seconds until melted and well combined.
  • Knead mozzarella dough by hand until well combined, then incorporate the egg yolk and continue kneading until fully integrated.
  • Place the dough between two sheets of parchment paper on a flat surface. Use your hands to flatten the dough before rolling it out with a rolling pin.
  • Roll the dough into a uniformly thin rectangle. Lightly prick the dough all over with a fork to avoid bubbling during baking. Slice the dough into 1-inch squares using a knife.
  • Place the squares onto the baking sheet, ensuring they have some space between each other.
  • Bake in the oven for 5 to 6 minutes until lightly browned. Remove from the oven, flip the crackers, and bake for an additional 2 minutes until crisp. Keep a close eye to avoid burning.
