Irresistible cheesy keto crackers paired with creamy smashed avocado - a hit with everyone, keto or not!
Ingredients:
  • 155g (1 1/2 cups) Perfect Bakes 3 cheese blend
  • 80g (2/3 cup) almond meal
  • 60g cream cheese
  • 1 tsp finely chopped fresh rosemary leaves
  • 20.00 ml sunflower seeds
  • 2 tsp linseeds
  • Smashed avocado, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Line 2 baking trays with baking paper and set aside. In a medium saucepan, combine cheese, almond meal, cream cheese, and 60ml (1/4 cup) water. Cook over medium heat, stirring constantly with a wooden spoon, for about 3 minutes until everything is melted and well combined. Remove from heat.
  • Swiftly combine the egg and rosemary, beating until the egg is fully incorporated. Spread half of the mixture onto a prepared tray. Sprinkle half of the sunflower seeds and linseeds on top. Cover with an additional sheet of parchment paper and use a rolling pin to flatten into a thin 2-3mm rectangle.
  • Peel off the top sheet and slice into wedges using a pizza cutter. Repeat with the rest of the mixture and seeds.
  • Bake until golden, then let cool. Enjoy with avocado if desired. Store in an airtight container at room temperature for up to two days.
