Keto-friendly mini frittatas with salami, cheese, and peas - ideal for on-the-go lunches or snacks for kids.
Ingredients:
  • Oil
  • 100g Danish salami, chopped
  • 60g tasty cheese
  • 60g pea
  • 125ml cream
  • 6 eggs
  • Salt & freshly ground pepper, to season
Instructions:
  • Preheat your oven to 180°C, then generously grease a 6-cup Texas muffin pan with oil.
  • Mix together the savory salami, flavorful cheese, and wholesome peas in a medium bowl, then evenly distribute the delicious mixture into the muffin pan holes.
  • Whisk cream and eggs in a medium jug with a fork, then season with salt and pepper. Pour the mixture evenly over the salami. Bake for 25 minutes until puffed, golden, and set in the middle.
  • Allow to cool slightly, then transfer from the pan. For optimal freshness, place on a wire rack if not serving right away.
