Delicious brunch bake combining salami, mushrooms, tomatoes, and artichoke hearts with gooey cheese and eggs. Ideal for any meal!
Ingredients:
  • 0.5 cup diced salami
  • 0.5 cup artichoke hearts, drained and chopped
  • 0.5 cup chopped cherry tomatoes
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 6 eggs
  • 0.33333334326744 cup milk
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ground black pepper to taste
  • 0.33333334326744 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and butter up a shallow 2-quart baking dish.
  • In a hot skillet, sauté salami, artichokes, tomatoes, and mushrooms for 4 minutes until warmed. Transfer the flavorful mixture to a baking dish.
  • In a big bowl, whisk together eggs, milk, green onions, garlic, basil, onion powder, salt, and black pepper. Pour this mixture over the salami. Top with a generous sprinkle of mozzarella and Parmesan cheese.
  • Bake for approximately 20 minutes, until the eggs are fully cooked and the cheese is beautifully melted.
