Savor a quick and flavorful Italian herb frittata with eggs and ham - ready in 25 minutes!
Ingredients:
  • 8 large eggs
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried basil leaves
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried mint leaves
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried sage leaves
  • 1 tablespoon freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup diced fully cooked ham or prosciutto (2 ounces)
  • 1 tablespoon butter or stick margarine
  • 1 small onion, finely chopped (1/4 cup)
Instructions:
  • Thoroughly mix all ingredients, except for ham, butter, and onion, until well combined. Then gently fold in the ham.
  • In a 10-inch nonstick skillet over medium-high heat, melt the butter until sizzling. Sauté the onion in the fragrant butter for 4 to 5 minutes, stirring often, until just tender; then lower the heat to medium-low.
  • Pour the luscious egg mixture into a sizzling skillet. Let it cook undisturbed for 9 to 11 minutes until the edges are perfectly set and the bottom turns a beautiful light brown. Finally, slice into tempting wedges to serve.
