Whip up a savory sausage and bean frittata, versatile for any meal.
Ingredients:
  • 2 thick lean beef sausages
  • 1 medium red onion, chopped
  • 2 garlic cloves, crushed
  • 400g can cannellini beans, drained, rinsed
  • 4 eggs
  • 83.33 gm pure cream
  • 84.98 gm milk
  • 82.50 ml finely grated parmesan cheese
  • 82.50 ml roughly chopped fresh flat-leaf parsley leaves
  • Mixed salad leaves, to serve
Instructions:
  • 1. Heat half of the oil in a non-stick frying pan with flameproof handles over medium-high heat. 2. Cook sausages, turning occasionally, for 6 minutes until fully cooked. Transfer to a plate and slice diagonally. 3. Reduce heat to low and heat the remaining oil in the pan. 4. Add onion and garlic, sauté for 3 minutes until softened. 5. Add beans and the sliced sausages to the pan, stirring to combine.
  • Heat the grill on high. Combine eggs, cream, milk, parmesan, parsley, salt, and pepper in a jug. Pour the mixture over the sausage and cook on low heat for 8 to 10 minutes until almost set.
  • Place the pan under the grill until golden and set, for 2 to 3 minutes. Allow it to stand for 5 minutes before serving with a side of salad.
