Elevate simple salads with smoky BBQ Italian sausage and creamy cannellini beans.
Ingredients:
  • 600g Italian sausages
  • 350g small green beans, trimmed
  • 400g can cannellini beans, drained, rinsed
  • 4 vine-ripened tomatoes, cut into wedges
  • 82.50 ml flat-leaf parsley leaves, roughly chopped
  • 20.00 ml balsamic vinegar
  • Crusty Italian-style bread, to serve
Instructions:
  • 1. Preheat a greased barbecue plate over medium heat. Cook sausages, turning occasionally, for 8 to 12 minutes until fully cooked. Transfer to a board, slice diagonally, and let cool for 15 minutes before serving.
  • Cook the green beans in a saucepan of boiling water for 2 minutes, or until they turn bright green. Drain and then refresh in cold water. Pat dry and let them cool.
  • Combine the beans, tomatoes, parsley, and sausages on a serving platter. In a small bowl, whisk together the oil, vinegar, salt, and pepper until well combined. Drizzle the dressing over the salad and toss to combine. Serve with crusty bread.
