Italian sausages with pineapple salsa

Instructions:
  • Mix the pineapple, onion, capsicum, chives, sugar, salt, and pepper in a bowl. Adjust seasoning to taste.
  • Steam the potatoes in a steamer basket over simmering water until just tender, about 5-6 minutes.
  • Prepare the barbecue grill or chargrill by brushing it with 2 teaspoons of oil and heating it over high heat. Lower the heat to medium before adding the sausages. Cook the sausages, turning occasionally, for 8 minutes or until fully cooked. Transfer them to a plate and loosely cover with foil to maintain warmth.
  • In a large bowl, coat potatoes with the remaining oil, salt, and pepper. Arrange in a single layer on a preheated barbecue grill or chargrill, cooking for 1-2 minutes on each side until golden.
  • Plate the sausages and drizzle with the pineapple salsa. Garnish with the potatoes and fresh salad leaves. Serve hot.
