Delight the family with kid-friendly sausage and potato salad - the ultimate comfort meal.
Ingredients:
  • 750g desiree potatoes, peeled, cut into 2cm pieces
  • 12 Italian sausages
  • 125g (1/2 cup) whole-egg mayonnaise
  • 2 green shallots, ends trimmed, thinly sliced
  • 35.10 gm wholegrain mustard
  • 2 tsp white wine vinegar
  • 10.00 gm warm water
  • 2 baby cos lettuces, leaves separated, washed, dried, torn
  • 62.50 ml fresh continental parsley leaves
Instructions:
  • Boil the potato in a large saucepan of water until tender, about 8 minutes. Drain and let it cool for 5 minutes.
  • Heat a large frying pan over medium heat. Sear the sausages for 3-4 minutes on each side until they are cooked through.
  • In a bowl, mix together mayonnaise, shallot, mustard, vinegar, and water.
  • In a large bowl, combine the potato with the mayonnaise mixture until well coated. Add the lettuce and parsley, gently toss until evenly mixed. Serve the salad and sausages on plates.
