Whip up a savory Italian frittata with eggs, mushrooms, and Swiss chard in just 25 minutes for a delicious breakfast.
Ingredients:
  • 2 tablespoons olive oil
  • 2 teaspoons finely chopped garlic
  • 1 package (8 oz) sliced fresh cremini mushrooms
  • 3 cups chopped Swiss chard
  • 8 eggs
  • 3 tablespoons whipping cream
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 oz fontina cheese, shredded (1 cup)
Instructions:
  • Preheat the broiler. In a 10-inch nonstick skillet, heat oil over medium heat. Sauté garlic and mushrooms for 4 minutes until mushrooms are tender, stirring frequently. Add Swiss chard and cook for 2 minutes until just wilted. Reduce heat to medium-low.
  • In a medium bowl, whisk together eggs, whipping cream, salt, and pepper until smooth. Pour the mixture over the mushrooms without stirring. Cook for 8 to 9 minutes until the edges are set and the bottom begins to brown. Top with cheese before serving.
  • Under the broiler, roast the frittata with the top positioned about 5 inches away from the heat for approximately 4 minutes, or until the eggs set and achieve a light golden brown color. (Note: The frittata will rise while broiling and flatten once taken out.) Slice into squares to serve.
