Savor this quick Italian herbed ham frittata in just 25 minutes.
Ingredients:
  • 6 eggs
  • 3 egg whites
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1/8 teaspoon pepper
  • 1 tablespoon butter or margarine
  • 1/2 cup diced fully cooked ham
  • 1/2 cup shredded Swiss cheese (2 ounces)
Instructions:
  • Whisk together eggs, egg whites, chives, parsley, salt, and pepper until thoroughly combined in a medium bowl.
  • Heat butter in a 10-inch nonstick skillet until melted and sizzling. Pour in the egg mixture and top with ham and cheese. Lower the heat, cover, and cook for 8 to 10 minutes until the eggs are fully set.
  • Preheat the oven to broil. Broil the frittata on the top rack, about 4 to 5 inches from the heat, for approximately 2 minutes or until it turns a light golden brown. Cut it into wedges before serving.
