Vegetarian slow cooker frittata bursting with veggies and savory Italian flavors - perfect for breakfast or brunch!
Ingredients:
  • 1 teaspoon ghee (clarified butter)
  • 0.5 (8 ounce) package mushrooms, sliced
  • 0.25 cup chopped fresh spinach
  • 0.25 cup sliced cherry tomatoes
  • 2 medium green onions, sliced
  • 6 large eggs
  • 0.5 cup shredded Cheddar cheese
  • 1 tablespoon freshly grated Parmesan cheese
  • 2 teaspoons Italian seasoning
Instructions:
  • Generously coat the slow cooker with cooking spray.
  • In a skillet over medium heat, melt ghee until sizzling. Add mushrooms, spinach, cherry tomatoes, and green onion, and sauté for 5 minutes until tender. Season with salt and pepper, then transfer the vegetables to the slow cooker.
  • Combine eggs, sharp Cheddar, fresh parsley, Parmesan, and Italian seasoning in a bowl. Pour this delicious egg mixture over the veggies in the slow cooker.
  • Cook covered for 1 to 2 hours on High or 3 to 4 hours on Low until the dish is fully cooked and set.
