Cheesy chorizo frittata cooked effortlessly in the slow cooker, ideal for stress-free gatherings.
Ingredients:
  • 18.20 gm olive oil
  • 1/2 brown onion, finely chopped
  • 1 chorizo, sliced into rounds
  • 1 small red capsicum, deseeded, coarsely chopped
  • 6 cherry tomatoes, halved
  • 40.00 ml fresh continental parsley, chopped, plus extra sprigs, to serve
  • 1.25 gm paprika
  • 8 eggs
  • 40g (1/2 cup) coarsely grated cheddar cheese
Instructions:
  • Prepare the 3.5L slow cooker by lightly greasing the insert with spray oil. In a large frying pan over medium heat, sauté the onion and chorizo until the chorizo is golden and caramelized, about 3-4 minutes. Transfer the cooked ingredients to the slow cooker and add the capsicum, cherry tomato, and parsley. Sprinkle with paprika.
  • Combine the eggs and cheese, season to taste, then pour over the chorizo mixture. Cover and cook on Low for 2 1/2 hours or until the eggs are set. Garnish with extra parsley leaves before serving.
