Spicy chorizo, jalapeño cheese, and fire-roasted tomatoes make a flavorful nacho dip with a fiery kick, perfect for entertaining.
Ingredients:
  • 1 1/4 pounds bulk chorizo sausage
  • 1/3 cup finely chopped onion
  • 3 cloves garlic, finely chopped
  • 1 package (16 ounces) mild Mexican pasteurized prepared cheese product with jalapeño peppers, cut into cubes
  • 1 can (14.5 ounces) crushed fire-roasted tomatoes, undrained
  • 1/4 cup chopped fresh cilantro
  • 9 ounces tortilla chips
Instructions:
  • In a large skillet over medium-high heat, sauté the sausage, onion, and garlic until the sausage is fully cooked. Drain any excess grease before using.
  • Add the chorizo mixture, cheese, and tomatoes into a 2 1/2- to 3 1/2-quart slow cooker.
  • Cook the mixture covered on Low heat for 3 to 4 hours, remembering to stir halfway through, until the cheese is melted and the mixture is heated through.
  • Mix in the fresh cilantro and enjoy with crispy tortilla chips for dipping. Keep warm on the Low heat setting for up to 1 1/2 hours, remembering to stir occasionally.
