Spicy Italian sausage elevates this slow cooker chowder with corn, potatoes, bell peppers, and onions.
Ingredients:
  • 3 large red potatoes, cubed
  • 1 (32 ounce) container chicken broth
  • 2 (16 ounce) cans sweet cream-style corn
  • 1 (16 ounce) can whole-kernel corn, drained
  • 1 cup half-and-half
  • 0.5 cup salted butter, cut into small pieces
  • 2 red bell peppers, chopped
  • 1 large onion, chopped
  • 1 tablespoon ground black pepper
  • 1 pound bulk hot Italian sausage
  • 0.5 cup all-purpose flour
Instructions:
  • In a slow cooker set to Low, blend together potatoes, chicken broth, cream-style corn, whole-kernel corn, half-and-half, butter, bell peppers, onion, and black pepper.
  • Preheat a large skillet over medium-high heat. Brown the sausage by breaking it up into small pieces with a spoon until crumbly, about 5 to 7 minutes. Transfer the cooked sausage to a bowl using a slotted spoon to drain excess fat. Coat the sausage with flour and then add it to the slow cooker.
  • Simmer gently with lid on, stirring occasionally, until veggies are soft, for approximately 4 hours.
