Try this delicious and versatile salami and broccolini frittata for a quick and satisfying meal that the whole family will love!
Ingredients:
  • 8 eggs
  • 80ml (1/3 cup) thickened cream
  • 70g (1/2 cup) pre-grated extra sharp parmesan
  • 1 bunch broccolini
  • 40g pre-sliced pepperoni salami
Instructions:
  • Place a 25cm ovenproof frying pan over medium-high heat, preheat the grill on high, and boil the kettle.
  • Combine eggs and cream in a jug, season, and stir in 50g (1/3 cup) parmesan. Heat pan, add oil, then pour in the egg mixture. Cook for 3 minutes until edges start to set.
  • As the egg mixture cooks, halve the thicker broccolini stalks, then blanch them in a large heatproof bowl filled with boiling water for 1 minute until bright green. Drain well before using.
  • Layer the broccolini and salami over the egg mixture, then generously sprinkle with the remaining Parmesan. Grill for 5 minutes until golden and set. Season to taste and serve.
