Irresistible white chocolate slice with apricot and coconut - guaranteed seconds!
Ingredients:
  • 100g butter, chopped
  • 360.00g white chocolate, chopped
  • 2 x 250g packet Scotch Finger biscuits, roughly chopped
  • 130.00 gm shredded coconut
  • 250.00 ml dried apricots, chopped
  • 1 orange, rind finely grated
  • 60g butter, chopped
Instructions:
  • Prepare a 3cm deep, 20cm x 30cm lamington pan by lining its base and sides.
  • In a saucepan over low heat, melt together butter, chocolate, and condensed milk until slightly thickened, stirring constantly for about 10 minutes. Transfer mixture to a large bowl.
  • Combine the biscuits, coconut, apricots, and orange rind until mixed well. Press the mixture into a pan and chill in the refrigerator for 1 hour or until set.
  • Prepare the topping by combining butter and chocolate in a microwave-safe bowl. Microwave on MEDIUM (50%) power for 2 to 3 minutes, stirring every minute with a metal spoon until the mixture is melted and smooth.
  • Smoothly spread the delicious topping over the crust and chill until set. Slice into squares and enjoy!
