Delicious gluten-free cookies with apricot, coconut, and white chocolate for a chewy treat.
Ingredients:
  • 180g white chocolate, chopped
  • 125g butter, softened
  • 1 egg
  • 250.00 ml gluten-free plain flour
  • 2.00 gm gluten-free baking powder
  • 250.00 ml Apricot and Coconut Muesli (Wheat & Gluten Free Muesli)
  • 12.00 gm pure icing sugar
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with baking paper.
  • Place half of the chocolate in a microwave-safe bowl. Microwave uncovered on MEDIUM (50%) power for 2 minutes, stirring with a metal spoon every minute. Allow to cool.
  • Cream together the butter and sugar using an electric mixer until light and fluffy. Mix in the egg thoroughly. Stir in the melted chocolate and beat until the mixture is smooth and well combined.
  • Combine the flour and baking powder in a bowl, mix well. Add the muesli and remaining chopped chocolate, stir. Cover and refrigerate for 30 minutes.
  • Shape tablespoonfuls of dough into balls, then arrange them on baking trays with enough space between each one. Gently press down on the dough with the back of a spoon to flatten the cookies. Bake in the oven for 15 to 20 minutes, or until they turn golden brown, swapping the trays halfway through. Allow the cookies to cool before enjoying.
  • Sprinkle with a touch of powdered sugar for a sweet and elegant finish before presenting.
