Almond, Apricot and White Chocolate Decadence Bars

Award-winning 2008 recipe! Indulgent apricot, cream cheese, and almond paste bars - a decadent delight.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter or margarine, melted
  • 1/2 teaspoon almond extract
  • 1 egg, slightly beaten
  • 1 package (7 or 8 oz) almond paste (not marzipan)
  • 1/2 cup sugar
  • 1 cup finely chopped dried apricots (6 oz)
  • 6 oz cream cheese, softened
  • 2 eggs
  • 1 teaspoon lemon juice
  • 1 bag (12 oz) white vanilla baking chips (2 cups)
  • 2/3 cup whipping cream
  • 1/2 cup sliced almonds
Instructions:
  • Preheat oven to 375°F. Mix cookie base ingredients in a large bowl until a soft dough forms. Press dough into an ungreased 13x9-inch pan. Bake for 10 to 15 minutes or until set. Allow to cool for 10 minutes.
  • In a large bowl, use an electric mixer on low speed to combine almond paste and sugar until crumbly. Then add apricots and mix on low speed until combined. Add cream cheese, 2 eggs, and lemon juice, and mix on medium speed until well blended. Pour over the warm cookie base.
  • Bake for 20-25 minutes until firm, then let it cool for 30 minutes.
  • Pour hot whipping cream over baking chips in a small bowl. Let it sit for 1 minute, then stir until smooth. Spread the mixture over the filling, sprinkle with almonds, and refrigerate until set for about 2 hours. Once set, cut into 36 bars and store covered in the refrigerator.
