Make delicious Italian almond biscotti with apricots and white chocolate for a crowd-pleasing treat.
Ingredients:
  • 1.5 cups sugar
  • 0.5 cup butter, plus more for greasing
  • 2.75 cups all-purpose flour, plus more for dusting
  • 0.75 cup chopped toasted almonds
  • 0.75 cup chopped dried apricots
  • 0.25 cup orange juice
  • 3 (1 ounce) squares white chocolate, melted and cooled
  • 3 (1 ounce) squares white chocolate, chopped
  • 1 teaspoon almond extract
Instructions:
  • Preheat the oven to 350°F (175°C) while preparing 2 cookie sheets by greasing and flouring them.
  • Cream together sugar, butter, and eggs in a large bowl using an electric mixer until smooth and creamy. Stir in flour, almonds, apricots, orange juice, melted white chocolate, chopped white chocolate, baking powder, salt, and almond extract until well blended; dough will be sticky and very soft.
  • Separate dough in half and shape into 2 sleek logs, approximately 2 inches wide each. Arrange logs on a lined baking sheet.
  • Bake in the preheated oven until perfectly golden, for 25-30 minutes, ensuring they don't over-brown. Allow to cool on the sheets for 10 minutes. Slice logs into 1/2-inch wide strips.
  • Return the cookies to the baking sheets and bake for an additional 10 minutes in the oven. Allow them to cool completely before serving.
