Make gourmet scones easily at home for a delightful coffeehouse experience.
Ingredients:
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup firm butter or margarine
  • 1/3 cup finely chopped dried apricots
  • 1/3 cup white vanilla baking chips
  • 1 egg
  • About 1/3 cup half-and-half
  • 1/3 cup white vanilla baking chips, melted
Instructions:
  • Preheat your oven to 400°F and lightly grease a cookie sheet. In a large bowl, combine the flour, sugar, baking powder, and salt. Add the butter and mix until the mixture resembles fine crumbs using a pastry blender or 2 table knives.
  • Set aside 2 tablespoons of apricots for later. Mix the rest of the apricots and 1/3 cup of vanilla baking chips into the crumbly mixture. Add the egg and enough half-and-half to make the dough come together and form a ball.
  • Knead the dough lightly 10 times on a floured surface. Shape it into an 8-inch round on a cookie sheet. Cut it into 8 wedges without separating them.
  • Bake for 14 to 16 minutes until beautifully golden brown. Remove from the cookie sheet right away and delicately separate the wedges.
  • Drizzle melted baking chips over scones using a plastic bag with a small hole, sprinkle with 2 tablespoons of reserved apricots, then drizzle the rest of the melted chips over. Serve warm or cool.
