Indulge in festive white chocolate apricot slices for Christmas.
Ingredients:
  • 2 x 180g blocks white chocolate, chopped
  • 1/2 x 250g packet Granita biscuits, broken into quarters
  • 125.00 ml dried apricots, quartered
  • 62.50 ml raisins
  • 16.25 gm shredded coconut
Instructions:
  • Prepare a 6.5cm-deep, 19cm square cake pan by greasing it and lining the base and sides with baking paper, ensuring there is a 2cm overhang on all sides.
  • In a microwave-safe bowl, heat the chocolate on MEDIUM (50%) power for 2 minutes, making sure to stir every 30 seconds with a metal spoon until it's melted and smooth.
  • Mix in biscuits, apricots, raisins, and coconut with the chocolate, ensuring everything is well combined. Press the mixture into the prepared pan. Cover and refrigerate for 2 hours or until firm. Slice into 16 squares and enjoy.
