Irresistible slice for all lunchboxes!
Ingredients:
  • Coles organic butter, unsalted, melted, to grease
  • 75g (1/2 cup) self-raising flour
  • 75g (1/2 cup) plain flour
  • 90g (1 cup) rolled oats
  • 70g (2/3 cup) desiccated coconut
  • 140g (2/3 cup, firmly packed) brown sugar
  • 130g (2/3 cup) sultanas
  • 95g (1/2 cup) milk chocolate bits
  • 125g organic butter, unsalted, melted, cooled
  • 1 egg, lightly whisked
Instructions:
  • Preheat the oven to 180°C. Grease a 17 x 27cm slab pan with melted butter and line the base and two long sides with non-stick baking paper, letting it hang over the edges.
  • Sift the flours into a bowl and mix in oats, coconut, sugar, sultanas, and milk chocolate. Create a well in the center and pour in melted butter and egg. Stir with a wooden spoon until fully combined. Spread the mixture in the pan and smooth the top with the back of a spoon.
  • Bake in a preheated oven until golden brown and firm to the touch, about 20 minutes. Allow to cool completely, then cut into squares to serve.
