Best-ever gluten-free choc chip cookies recipe

Gluten-free chocolate chip cookies with a crisp exterior and soft center. Contains oat flour.
Ingredients:
  • 250g butter, at room temperature, chopped
  • 140g (2/3 cup, firmly packed) brown sugar
  • 70g (1/3 cup) caster sugar
  • 8.80 gm gluten-free vanilla extract
  • 350g (2 1/2 cups) gluten-free plain flour
  • 55g (1/3 cup) gluten-free oat flour
  • 2 tsp xanthan gum
  • 2.50 gm bicarbonate of soda
  • 150g dark chocolate chips
Instructions:
  • In a medium bowl, whip together the butter, sugars, and vanilla using electric beaters until combined. Add the eggs one at a time, mixing well after each addition. Blend in the flours, salt, xanthan gum, and bicarbonate of soda until fully incorporated. Gently fold in the chocolate. Chill the dough in the fridge for 1 hour until firm.
  • Preheat your oven to 180C/160C fan-forced and prepare 3 baking trays by lining them with baking paper.
  • Roll the mixture into 24 balls with slightly damp hands. Space them 6cm apart on the trays, then gently press down on each ball with the heel of your hand to flatten slightly.
  • Bake for 18 minutes, or until lightly golden. Then allow to cool on trays.
