Overnight soaked oats microwaved for one minute create a quick and satisfying make-ahead breakfast for the week, perfect for busy mornings.
Ingredients:
  • 1/4 cup steel-cut oats or old-fashioned rolled oats (not instant oats; use gluten-free oats if needed)
  • 1/2 to 3/4 cup water, non-dairy milk, or milk
  • Pinch salt
  • To serve — choose a few!
  • Brown sugar, maple syrup, honey, or other sweetener
  • Dried fruit, like dried cherries, cranberries, or figs
  • Fresh fruit, like raspberries, blue berries, bananas, apples, or pears
  • Chopped nuts, like pecans, pistachios, walnuts, or almonds
  • Splash of milk, creme fraiche, or yogurt
Instructions:
  • In a jar, mix oats, water, and salt. Use 1/2 cup water for thick oatmeal or 3/4 cup for a softer porridge. Secure the lid, shake well to soak the oats. Add more liquid later to adjust consistency.
  • Prepare your toppings: Mix a handful of selected oatmeal toppings in a small container. (If preparing multiple servings for the week, assemble the toppings the night before consumption.)
  • Chill in the fridge for at least 8 hours or up to 5 days.
  • To microwave the oatmeal, remove the lid from the container and place it on a microwave-safe plate. Heat on high power for 30 seconds, stir, then microwave for another 30 seconds. Continue heating in 15 to 30-second intervals until the liquid is very hot. Total cooking time may vary; aim for about 1 minute and 20 seconds. It's normal for a thin layer of foamy liquid to be on top of the oats.
  • Allow the oats to rest for 2 to 3 minutes to thicken. Stir the oats well until they reach a thick and creamy consistency. If the oatmeal is too runny, microwave for an additional 15 to 30 seconds, carefully watching for any foaming. Should the oats become too dense, mix in a small amount of milk, water, or your preferred liquid to achieve your desired texture.
  • Gently fold in the toppings and plate the dish. Bon appétit!
