Indulge in this delicious gluten-free banana bread made with Betty Crocker® cake mix - a delightful breakfast option.
Ingredients:
  • 1 box (15 oz) Betty Crocker™ Gluten Free Yellow Cake Mix
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup butter, softened
  • 3 eggs
  • 1/2 cup chopped nuts, if desired
Instructions:
  • Preheat your oven to 350°F and generously grease the bottom of a 9x5-inch or 8x4-inch loaf pan with shortening.
  • In a large bowl, use an electric mixer on low speed for 30 seconds and then switch to medium speed for 2 minutes to blend the cake mix, mashed bananas, butter, and eggs. Remember to scrape the bowl occasionally. Transfer the batter into the pan.
  • Bake a 9-inch loaf for 55 to 60 minutes or an 8-inch loaf for 1 hour 5 minutes to 1 hour 15 minutes, until a toothpick inserted in the center comes out clean. Cover with foil to prevent overbrowning. Let it cool for 10 minutes, then remove the loaf from the pan and transfer it to a cooling rack. Allow to cool for about 1 hour before slicing.
