Kids' favorite: chocolate chip and strawberry mini pancakes.
Ingredients:
  • 150g self-raising flour
  • 1 egg
  • 375ml buttermilk
  • 50g strawberries, finely chopped
  • 62.50 ml mini choc chips
  • 40g butter
  • Sliced strawberries, extra, to serve
  • Honey, to serve
Instructions:
  • In a large bowl, combine the flour and sugar, then create a well in the center. Add the egg and buttermilk, and mix until fully incorporated. Let it rest for 30 minutes.
  • Mix in the diced strawberries and chocolate chips until well incorporated into the batter.
  • Heat butter in a large non-stick frying pan over medium heat. Spoon 6 tablespoons of batter around the pan's edge. Cook until bubbles appear and pancakes are golden underneath. Flip and cook until golden. Transfer to a plate, cover with foil, and repeat in 3 more batches, greasing the pan each time.
  • Plate the pancakes and generously adorn them with fresh sliced strawberries. Finish by elegantly drizzling them with sweet honey.
