Zucchini slice muffins

Enhance veggies by replacing bacon with shredded baby spinach.
Ingredients:
  • 2 bacon rashers, finely chopped
  • 1 brown onion, finely chopped
  • 2 zucchini, coarsely grated
  • 300g self-raising flour
  • 120g tasty cheese
  • 40.00 ml dill, finely chopped
  • 185ml milk
  • 60g butter, melted
Instructions:
  • Preheat the oven to 180C and line 6 muffin pan holes with paper cases.
  • In a medium frying pan over medium heat, sizzle the bacon and onion together for 5 minutes until the onion softens. Allow it to cool slightly before using.
  • In a spacious bowl, mix together zucchini, flour, cheddar, and dill. Pour in the onion mixture and mix well. In a separate container, whisk together the egg, milk, and butter. Combine with the zucchini mixture until just mixed. Spoon the mixture evenly into the lined holes.
  • Bake for 30 minutes or until a skewer comes out clean from the center. Enjoy warm or at room temperature.
