Bake delicious whole wheat zucchini muffins with a hint of pumpkin spice for a perfect transition from summer to fall.
Ingredients:
  • 1.5 cups whole wheat flour
  • 0.5 cup packed brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking powder
  • 0.5 cup coconut oil
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 0.75 cup pumpkin puree
  • 0.5 cup shredded zucchini
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it or lining it with paper liners.
  • Combine flour, brown sugar, pumpkin pie spice, baking soda, salt, and baking powder in a large bowl and whisk until well blended.
  • In a separate bowl, vigorously whisk together coconut oil, eggs, and vanilla extract. Incorporate the mixture into the flour blend, stirring until just combined. Gently fold in the pumpkin puree and zucchini into the batter.
  • Fill the muffin tin cups with the batter.
  • Bake in the preheated oven for 18 to 24 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
