Lamb chops with spicy pumpkin puree, zucchini and red onion

Garlic lamb chops paired with fiery pumpkin puree for a delicious meal.
Ingredients:
  • 3 medium green zucchinis, sliced lengthways
  • 1 large red onion, sliced crossways into eight slices
  • 60ml (1/4 cup) olive oil
  • 500g butternut pumpkin, peeled, deseeded, cut into 4cm pieces
  • 60ml (1/4 cup) milk
  • 1/4 tsp cayenne pepper
  • 20.00 ml loosely packed fresh thyme leaves
  • 8 (about 680g) lamb mid-loin chops
Instructions:
  • Preheat the grill to high heat. Brush zucchini and onion with 1 tablespoon of oil, then grill 6cm away from the heat for 5 minutes per side, until nicely browned. Once done, cover with foil to keep warm.
  • Cook pumpkin in a saucepan of seasoned boiling water for 8 minutes until tender. Drain and transfer to a blender with milk and cayenne pepper, blending until smooth.
  • In a bowl, mix the rest of the oil with garlic and thyme. Brush the lamb with the garlic mixture. Grill the lamb under preheated grill, about 6cm from the heat source, for 3 minutes on each side for medium-rare or to your desired doneness. Serve the lamb on the spicy pumpkin puree with zucchini and red onion.
