Lemon and oregano lamb chops with roast pumpkin

Spicy lamb chops with roasted pumpkin will leave everyone wanting seconds!
Ingredients:
  • 1kg pumpkin (butternut or jap), peeled, seeds removed, cut into 3cm cubes
  • 20.00 ml chopped fresh rosemary
  • Zest and juice of 1 large lemon
  • 20.00 ml dried oregano
  • 5.00 gm ground cumin
  • 8 lamb loin chops, trimmed of excess fat
  • 500.00 ml rocket leaves
  • Extra lemon wedges, to serve
Instructions:
  • Preheat your oven to 220°C. Combine pumpkin, rosemary, 1 tablespoon of oil, salt, and pepper in a roasting pan. Roast for 25 minutes until beautifully golden and tender.
  • Preheat a chargrill pan over medium-high heat. Combine zest, oregano, cumin, remaining oil, salt, and pepper. Rub mixture onto lamb. Grill for 3-4 minutes per side for medium doneness. Transfer to a plate, squeeze lemon juice over the lamb. Let it rest for 5 minutes. Serve with pumpkin, rocket, and lemon wedges.
