Lamb chops with oregano and lemon

Delicious lamb chops, great for any night!
Ingredients:
  • 1 tsp finely grated lemon rind
  • 42.00 gm lemon juice
  • 20.00 ml finely chopped fresh oregano leaves
  • 8 x 100g lamb chump chops
  • 100g baby rocket
  • 75g drained marinated artichoke quarters
  • 75g feta, crumbled
Instructions:
  • In a large shallow dish, mix lemon rind, half of the lemon juice, oil, oregano, and garlic. Add lamb and coat evenly in the mixture. Cover and refrigerate for at least 1 hour, if possible.
  • Preheat a barbecue chargrill or chargrill pan over medium-high heat. Toss capsicums in the remaining 2 teaspoons of oil. Char-grill capsicums for about 6 minutes until they are lightly charred and tender, then transfer them to a large bowl. Grill the lamb for 3 to 4 minutes on each side for a medium cook or until it reaches your desired level of doneness.
  • Combine rocket, artichokes, and feta with capsicum. In a small bowl, mix the remaining lemon juice, oil, oregano, and garlic. Season with salt and pepper. Drizzle the dressing over the salad and gently toss to coat. Serve the salad alongside lamb chops.
