Portuguese-style BBQ lamb cutlets

Spice up your lamb with a zesty Portuguese marinade, perfect for grilling to impress your spring guests!
Ingredients:
  • 12 Lamb Cutlets
  • 125ml red wine vinegar
  • 80ml olive oil
  • 15.00 gm ground paprika
  • 16.00 gm brown sugar
  • 20.00 ml dried oregano
  • 2 tsp thyme leaves
  • 1 long red chilli, seeded, finely chopped (optional)
Instructions:
  • Combine vinegar, oil, paprika, sugar, oregano, thyme, garlic, and chili (if using) in a large bowl, stirring until sugar dissolves to create the marinade.
  • Coat 12 succulent Coles Australian Lamb Cutlets in the marinade, ensuring they are fully covered. Refrigerate, covered, for 1 hour to enhance the flavors.
  • Preheat a barbecue grill or chargrill to medium heat. Drain the lamb, saving 2 tablespoons of the marinade. Grill the lamb for 1 minute, then flip and brush with half of the reserved marinade. Continue grilling for 1 minute. Repeat the process by flipping, brushing, and grilling for an additional 2 minutes on each side or until cooked to your preference. Allow the lamb to rest for 5 minutes before serving, and finish by sprinkling with fresh thyme.
