Spicy, gluten-free roast chicken seasoned with paprika, cayenne pepper, and garlic.
Ingredients:
  • 2kg whole chicken twin pack (2 x 1kg chickens)
  • 18.20 gm olive oil
  • 2 cloves garlic, crushed
  • 20.00 ml dried oregano
  • 1 tsp cayenne pepper
  • 2.40 gm salt
  • 2 lemons, quartered
Instructions:
  • Preheat the oven to 200C (180C fan-forced). Use kitchen scissors or poultry shears to carefully cut down both sides of the chicken backbones and remove them. Open the chickens up and flatten them by pressing with your hand.
  • Massage chicken skin with fresh lemon, then set aside lemons. Mix oil, garlic, oregano, paprika, cayenne, and salt together, then rub onto the chicken skin. Place chickens skin side up in a large baking dish and tuck in the reserved lemons.
  • Roast for 45 minutes until beautifully golden, ensuring it's cooked through. Let it rest for 10 minutes, then slice it into pieces. Finish by generously drizzling with the flavorful reserved pan juices before serving.
