Portuguese-style barbecued chicken

Elevate your BBQ with our flavorful Portuguese chicken recipe.
Ingredients:
  • 2 1kg (no.1) chickens
  • Lemon wedges, to serve
  • Hot potato chips, to serve
  • 5-7 small fresh red birdseye chillies, roughly chopped
  • 2 long red chillies, roughly chopped
  • 3 garlic cloves, roughly chopped
  • 60ml (1/4 cup) olive oil
  • 9.60 gm salt flakes
Instructions:
  • Create a fiery chilli sauce by blitzing chillies and garlic in a small food processor until finely chopped. Mix in oil, lemon juice, and salt until blended. Store in a jar or container for later use.
  • Place one chicken breast side up on a clean work surface. Use poultry shears to halve the breast by splitting the breastbone. Flatten the chicken by pressing it down. Cut on both sides of backbone and discard it. Remove breastbone halves and tuck under wings. Pat dry with paper towel. Repeat with the other chicken.
  • Preheat the barbecue grill on high. Score the chicken flesh with 5mm-deep and 4cm-long cuts using a knife. Set aside 2 1/2 tablespoons of chili sauce. Brush the underside of the chicken with the remaining chili sauce.
  • 1. Lower the heat to medium and place the chicken skin-side up on the preheated barbecue grill. Grill for 10 minutes, brushing occasionally with chilli sauce. 2. Brush the top of the chicken with the remaining chilli sauce, then flip it over. 3. Continue grilling for another 8 minutes or until the juices run clear when the thickest part of the chicken is pierced with a skewer.
  • Place the chicken on a plate, cover it loosely with foil, and let it rest for 5 minutes. Brush the chicken with the reserved chili sauce, then serve with lemon wedges and chips. Enjoy immediately!
