Portuguese-style chicken with rice & green bean salad

Transport your taste buds to Portugal with grilled lemon chicken.
Ingredients:
  • 4 (about 150g each) chicken breast fillets
  • 2 garlic cloves, crushed
  • 18.20 gm extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 20.00 ml finely grated lemon rind
  • 1 tsp finely grated fresh ginger
  • 1/2 tsp dried chilli flakes
  • 200g (1 cup) white long-grain rice
  • 200g green round beans, trimmed, cut into 3cm pieces
  • 150g (1 cup) frozen peas, thawed
  • 2 roma tomatoes, seeded, coarsely chopped
  • 4 shallots, trimmed, thinly sliced
Instructions:
  • Make deep diagonal cuts in each chicken fillet. Mix garlic, oil, lemon juice, lemon rind, ginger, and chili flakes in a shallow glass or ceramic dish. Add chicken and toss to coat well. Cover with plastic wrap and let it marinate for 10 minutes.
  • While the rice is cooking according to the packet directions, blanch the beans and peas in boiling water for 2 minutes until tender. Drain and transfer to a large bowl. Mix in the cooked rice, tomatoes, shallots, extra lemon juice, and additional oil. Toss everything together to combine and season with salt and pepper.
  • Preheat a sizzling grill to high heat. Grill chicken for 4 minutes on each side until perfectly charred and fully cooked. Enjoy with a delightful rice salad.
