Elevate your roast chicken with savory Portuguese seasonings.
Ingredients:
  • 1 large (about 2kg) chicken, cut into 6 or 8 portions
  • 1 long fresh red chilli, seeded, finely chopped
  • 2 garlic cloves, crushed
  • 10.00 gm paprika
  • 40.00 ml coarsely chopped fresh oregano
  • 1 tsp fresh thyme leaves
  • 60ml lemon juice
  • 36.40 gm olive oil
  • 16.00 gm brown sugar
  • 2 red onions, cut into wedges
  • 500g kipfler potatoes, washed, halved lengthways
  • Lemon wedges, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat the oven to 200°C. Place the chicken in a large roasting pan. Mix chili, garlic, paprika, oregano, thyme, lemon juice, oil, and sugar in a jug. Season with salt and pepper. Pour the mixture over the chicken, ensuring it's well coated.
  • Surround the chicken with the onion and potato to create a flavorful bed. Bake in a preheated oven, rotating occasionally, until golden brown and fully cooked, approximately 45 minutes.
  • Plate the dish and serve promptly with lemon wedges and a side of mixed salad leaves, if preferred.
