Easy Cake Mix Zucchini Bread

Make delicious zucchini loaves using fresh garden zucchinis. They are easy, freezable, and perfect for preserving.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 tablespoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1/4 cup milk or water
  • 3 eggs
  • 2 cups coarsely shredded zucchini (about 2 medium)
Instructions:
  • Preheat your oven to 350°F and generously spray the bottoms of two 8x4-inch loaf pans with cooking spray.
  • Combine cake mix, cinnamon, oil, milk, and eggs in a large bowl until thoroughly mixed. Gently fold in zucchini. Divide batter evenly into pans.
  • Bake for 45 to 50 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then transfer to a cooling rack. Allow to cool completely for about 1 hour before wrapping tightly and storing at room temperature for up to 2 days.
