Easy, moist, and chewy peanut butter cookies made with Betty Crocker™ cake mix. Just mix peanut butter, brown sugar, and cake mix, shape dough, and bake. Makes 50 cookies. Great for sharing!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/4 cup packed brown sugar
  • 2 tablespoons water
  • 1 cup creamy peanut butter
  • 1/4 cup shortening
  • 2 eggs
  • 1/2 cup granulated sugar
Instructions:
  • Preheat oven to 375°F (350°F for dark or nonstick cookie sheets). In a large bowl, mix cake mix, brown sugar, water, peanut butter, shortening, and eggs with an electric mixer on low speed until well combined.
  • Roll the dough into 1 1/4-inch balls, coat them in granulated sugar, and place them 2 inches apart on ungreased cookie sheets. Flatten each ball in a crisscross pattern using a fork dipped in sugar, then dispose of any excess sugar.
  • Bake for 8 to 10 minutes until edges are golden brown. Allow to cool for 1 minute, then transfer to a cooling rack. Let cool completely for about 30 minutes before storing covered at room temperature.
