Easy Cake Mix Pumpkin Cookies

Whip up delicious fall treats with cake mix pumpkin cookies - simply mix together cake mix, pumpkin puree, and cream cheese for a soft and chewy dessert. Top with homemade or store-bought cream cheese frosting, a sprinkle of pumpkin pie spice, and enjoy the flavors of the season!
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup butter, softened
  • 1/3 cup canned pumpkin (not pumpkin pie mix)
  • 1 egg
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 tablespoon pumpkin pie spice
  • 6 oz (from 8-oz package) cream cheese, softened
  • 3 tablespoons butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon pumpkin pie spice
Instructions:
  • Preheat oven to 350°F.
  • In a large bowl, whisk together 8 oz cream cheese, 1/2 cup softened butter, and pumpkin using an electric mixer on medium speed for about 1 minute until well combined. Scrape the sides of the bowl. Mix in the egg until smooth. Then, on low speed, stir in the cake mix and 1 tablespoon pumpkin pie spice until fully incorporated. Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased cookie sheets.
  • Bake for 13 to 15 minutes or until edges are lightly golden. Let cool on the cookie sheet for 2 minutes, then transfer to a cooling rack. Allow to cool completely, approximately 20 minutes.
  • Mix Frosting ingredients until smooth, spread 2 teaspoons of frosting on each cookie, sprinkle with 1/2 teaspoon pumpkin pie spice, and refrigerate covered.
