Freezable breakfast sandwiches with vegetarian sausage, mushrooms, and spinach on English muffins.
Ingredients:
  • olive oil cooking spray
  • 4 vegetarian sausage patties
  • 4 ounces fresh mushrooms, chopped
  • 0.75 cup finely chopped fresh spinach
  • 0.5 teaspoon Italian seasoning
  • 1 pinch chili powder, or to taste
  • 1 pinch cayenne pepper, or to taste
  • 1 cup egg whites
  • 0.5 cup low-fat cream cheese
  • 4 English muffins, split and toasted
Instructions:
  • Heat a nonstick skillet over medium heat with a light coating of cooking spray. Cook patties until warm throughout, about 4 to 5 minutes on each side. Plate and serve.
  • Spritz skillet with a touch of cooking spray. Sauté mushrooms over medium heat until tender for about 5 minutes. Toss in spinach, garlic, Italian seasoning, chili powder, cayenne, salt, and pepper; mix well.
  • Gently mix in the egg whites until combined. Cook until just starting to set, for 2 to 3 minutes. Lift the edges to allow the uncooked egg to run underneath. Continue this process until fully set, approximately 5 minutes. Remove from heat and slice into 4 wedges.
  • Layer each English muffin half with a generous spread of cream cheese, then sandwich a sausage patty and wedge of egg between them.
