Protein-packed breakfast wrap with a spicy kick for energizing your day.
Ingredients:
  • 2 large free-range eggs
  • olive oil
  • 10 g mature Cheddar cheese
  • 1 wholegrain seeded tortilla wrap
  • ½ a bunch of fresh basil
  • chilli sauce
  • 200 g ripe tomatoes
  • 30 g rocket
Instructions:
  • In a bowl or jug, crack 2 large eggs, season with sea salt and black pepper, then whisk until well combined. Drizzle olive oil in a non-stick frying pan over medium heat, spread it evenly with kitchen paper. Pour in the egg, push edges towards the center with a spatula for 1-2 minutes until almost cooked. Sprinkle grated mature Cheddar over the omelette, let it melt, then slide onto a plate. Warm a wholemeal tortilla in the pan on both sides. Place the tortilla on the omelette, flip both back into the pan so tortilla is at the bottom. Top with torn basil leaves, drizzle with chilli sauce, add sliced ripe tomatoes, rocket, salt, and pepper. Place a sheet of greaseproof paper on your work surface, place the tortilla on top, roll up with the paper to secure, then cut in half to enjoy.
