Savory roast beef, tomatoes, bell peppers, and seasonings rolled in whole wheat tortillas for a convenient and delicious meal on the go.
Ingredients:
  • 6 (12 inch) whole wheat tortillas
  • 6 leaves romaine lettuce
  • 1.25 pounds sliced roast beef
  • 1 cup chopped tomatoes
  • 1 cup chopped red bell pepper
  • 3 tablespoons red wine vinegar
  • 2 tablespoons ground cumin
Instructions:
  • Prepare each roll-up by laying out a 15-inch piece of wax paper or aluminum foil. Put a tortilla on top. Add a romaine lettuce leaf on top of the tortilla. Place 3 ounces of beef on each tortilla. Distribute the tomatoes, red and yellow bell peppers, oil, vinegar, and cumin evenly over the tortillas.
  • Roll the tortilla tightly around the filling and wrap it up in the paper or foil. Unwrap before enjoying.
