Mini chicken fajita roll-ups

Serve up delicious chicken roll-ups for party guests to enjoy.
Ingredients:
  • 1 avocado, mashed
  • 200g finely chopped roast chicken
  • 485g Fajita Kit
  • 80g (1 cup) grated cheddar
  • 500.00 ml finely shredded lettuce
  • 1 carrot, peeled, finely grated
  • 50g snow pea sprouts, trimmed
  • 125.00 ml mint leaves
  • 2-3 green shallots, shredded
  • Sour cream, to serve, optional
Instructions:
  • In one bowl, mix the avocado with 1 teaspoon of fajita spice mix. In another bowl, combine the chicken with 1 tablespoon of fajita spice mix.
  • Warm 2 tortillas in the microwave on High for 20 seconds until soft. Spread each tortilla with the avocado mixture. Top with cheese, chicken, lettuce, carrot, sprouts, mint, and shallot. Roll up each tortilla tightly and place seam side down on a tray. Repeat with remaining tortillas and fillings.
  • Trim the edges and cut each roll into 4 pieces. Secure with toothpicks and display attractively on a platter. Add a dollop of sour cream and a drizzle of mild Mexican salsa for a delicious finish.
